History of Timoncello
Baldassare Castelnovo, also known by the dialectal diminutive Sarén, was an innkeeper in Civate at the beginning of the 1900s.
During those years, following a trip to the Campania coast, he decided to work on his own version of limoncello to bring, for the first time, that much-loved lemon liqueur to the Lake Como area, where it was still unknown.
He wanted to give that liqueur its own character, something that told the story of the lake, and to move the guests of the Osteria Giardinetto with a taste of something special and unique.
After several attempts, he invented a refreshing and delicate pairing that allowed people to appreciate the Italian liqueur par excellence in a version tied to the Erba di Péss, an iconic ingredient of Lake Como. This is what thyme is called in these areas, the aromatic herb long used by the laghée fishermen to season lake fish dishes.
It was like a gift or "an act of love," as Baldassare used to say, for the lake and the inn. Sharing, sociability, and companionship—the first limoncello to reach Lake Como. Sarén’s liqueur became highly appreciated at the inn and turned into a symbol of the Giardinetto of Civate.
Today, Timoncello® is the Liquor of Lake Como. The secret formula of Baldassare, which for years remained exclusive to his family heirs, is now rediscovered and elevated to be shared, known, and appreciated.
